For me, German food is real comfort food, as that is what I grew up on. I recently heard someone refer to German sausages, wursts and other related cold cuts as "Tube meats". The old style german butchers elevated the transformation of a pig into a variety of finished products to a true art form, cholesterol implications notwithstanding. I understand where you are coming from, Gail, as I do encounter "consumer resistance" from Rose when I say that I want to cook a a favorite of mine at home, Schlachtplatte, which is sauerkraut with blood sausage, onion liverwurst and short ribs cooked in with it.
